    加热预处理对加热卷烟薄片裂解及感官品质的影响

    Effect of Heating Pretreatment on Pyrolysis and Sensory Quality of Heated Cigarette Flakes

    • 摘要: 为提升加热卷烟的烟草香气,探究加热预处理烟叶粉末对加热卷烟品质的影响,以配方烟叶粉末为试验材料,采用不同加热温度和加热时间对烟叶粉末进行加热预处理,分析预处理后烟叶粉末的常规化学成分;将加热预处理后的烟叶粉末制成加热卷烟薄片,分析薄片热裂解气溶胶成分,并将薄片制成加热卷烟进行感官品质评价。结果表明:一定加热温度和加热时间处理,可显著增加(p≤0.05)烟叶粉末总糖、还原糖含量,降低烟叶粉末淀粉含量;显著增加(p≤0.05)预处理后烟叶粉末制成薄片热裂解气溶胶中呋喃类、醛酮类、酸类、酚类物质等香气成分的含量;能显著提高(p≤0.05)加热卷烟的香味、烟气等感官品质。本试验中,较优的预处理条件为加热温度115 ℃,加热时间20 min。

       

      Abstract: In order to enhance the tobacco aroma of heated cigarettes, the effect of heating pretreatment of tobacco powder on the quality of heated cigarettes was investigated. With the formulated tobacco powder as experimental material, the heating pretreatment was carried out by controlling the heating temperature and time. The conventional chemical composition of pretreated tobacco powder was analyzed, then the heated pretreated powder was made into heated cigarette flakes, and the composition of pyrolysis aerosol was analyzed. Finally the flakes were made into heated cigarettes for sensory evaluation. Results showed that the heating pretreatment could significantly increase (p≤0.05) the total sugar and reducing sugar content, while decrease the starch content of tobacco powder under certain conditions of heating temperature and heating time, also significantly increase (p≤0.05) the content of aroma components including furans, aldehydes and ketones, acids, and phenolics in the thermally lysed aerosol of heated cigarette flakes. The heating pretreatment could significantly enhance (p≤0.05) the sensory quality of heated cigarettes such as aroma and smoke. In this experiment, the preferred pretreatment conditions were heating temperature of 115 ℃ and heating time of 20 minutes.
