    β-紫罗兰酮-β-环糊精包合物的结构确证及反应热力学研究

    • 摘要: 摘 要:利用饱和水溶液法制备了β-环糊精和β-紫罗兰酮的包合物,通过1H NMR和 DSC测试方法证实了包合物的生成。并对反应的热力学进行了研究,计算了包合物的稳定常数(K=1×1011),证实了包合过程为放热反应,得出包合反应的热力学常数△H=-58.6 kJ/mol,△S=-114.6 kJ/mol和△G=-2 743 kJ/mol (30℃),证实包合过程的推动力主要是范德华力。将包合物添加于卷烟配方的烟丝中,具有增进卷烟香气质量的作用。

       

      Abstract: Abstract: β-cyclodextrin inclusion complex of β-ionone were obtained by the saturated solution method, which structure was conformed by 1H NMR and DSC methods. Then the reaction thermodynamics were studied, and the stability constant of β-cyclodextrin inclusion complex was calculated (K=1×1011). The inclusion process was an exothermic process. Thermodynamics constant was obtained △H=-58.6 kJ/mol, △S=-114.6 kJ/mol and △G=-2743 kJ/mol (30℃). The study of thermodynamics confirmed that the main driving force of the inclusion reaction was the van der Waals force. It could play an important role in enhancing the aroma quality of cigarette.
