    四川会东烤烟香型风格特点及主导因子初探

    Studies on Aroma Type and its Dominated Factors of Flue-cured Tobacco in Huidong County of Sichuan Province

    • 摘要: 为明确四川会东烟叶香型风格特点及主导因子,选取四川会东初烤中部烟叶代表样品64 份,根据感官评价结果,对不同香型风格样品进行感官质量、外观质量和理化指标差异分析及系统聚类分析。结果表明,四川会东烤烟特色香型风格以清香型、清偏中、中偏清和浓透清为主;典型清香型及浓透清类型烟叶香吃味品质相对较好,其他风格类型越接近清香型,其感官香吃味品质得分越高;影响会东烟叶香型风格的主要因子为叶片颜色、叶面密度、总糖、还原糖、烟碱、总氮、氯、pH、糖碱比、两糖差。

       

      Abstract: 64 of flue-cured tobacco samples in Huidong County Sichuan Province were selected to study aroma styles characteristicand dominated factors influencing aroma styles. Based on variance analysis and cluster analysis of the indices of sensory quality,appearance quality, physical characteristic and chemical ingredients between different aroma type styles, the results showed thearoma type style of tobacco of Huidong were mainly faint scent, faint scent lean to middle one and middle scent lean to faint one andfaint scent close to full-bodied one; the sensory quality of typical faint scent tobacco and faint scent close to full-bodied one werebetter; for other aroma type style tobacco, the aroma type style was more close to faint scent, its smoking quality was the better;dominant factors influencing the aroma type style were leaf color, leaf density, sugar content, reducing sugar content, nicotine content,total nitrogen content, chlorine content, pH, the rate of sugar to nicotine, difference between total sugar and reducing sugar.
