Abstract:
To study the aroma characteristics and aroma style divisions of flue-cured tobacco in Jiangxi province, "flavor profile analysis" was used to evaluate the aroma flavors of the tobacco samples of the representative small region. The results showed that the tobacco aroma was the principle part of flavor of Jiangxi flue-cured tobacco; baking scent and spicy scent were the important flavor notes of it; clear-sweet, coke-sweet, woody, resinous and fruity scent were the leading flavor notes that caused the spatial differences of aroma style of Jiangxi flue-cured tobacco. Among them, woody, resinous and fruity notes had some regional features (The flavor notes in eastern region were stronger than that in western), but the main difference manifested in the positions of tobacco leaves. However, clear-sweet scent and coke-sweet scent not only showed an obvious position difference of leaves, but also had the regional differences. Middle leaves had stronger clear-sweet scent than the upper leaves, while coke-sweet scent showed the opposite; clear-sweet scent was more notable in the eastern tobacco-growing area, while coke-sweet scent was more prominent in the western. Jiangxi tobacco-growing areas can be clearly divided into the eastern and western aroma style area.
