      糖酯含量变化对烤后烟叶品质及非靶向代谢组的影响

      Effects of Sugar Ester Contents on the Quality and Untargeted Metabolome of Flue-cured Tobacco Leaves

      • 摘要: 为阐明糖酯对烤后烟叶品质的影响和贡献,利用课题组创制的遗传背景基本一致、糖酯含量显著不同的烟草近等基因系材料,开展了其烤后烟叶外观质量、常规化学成分、感官质量和非靶向代谢组的系统对比分析。结果表明,不同糖酯含量烤后烟叶外观与内在品质存在显著差异。提升糖酯含量可以有效提升烟叶的感官质量、改善其余味、减少刺激性和杂气,但Ⅲ~Ⅴ型糖酯含量的提高可能会对烟叶外观质量有一定负面影响。不同糖酯含量烟草近等基因系的非靶向代谢组具有明显的规律性差异,随着糖酯含量的变化,与糖酯合成直接相关的初级代谢路径以及类黄酮、生物碱等次级代谢路径均有显著联动。与中、低糖酯材料相比,高糖酯材料的香气物质基础更丰富,这可能是其感官质量表现最好的重要原因。因此,糖酯可作为改良烟叶感官质量的关键调控靶点。

         

        Abstract: To clarify the impact and contribution of sugar ester on the quality of flue-cured tobacco leaves, near-isogenic lines with the same genetic background but significantly different sugar ester contents were used for systematic comparative analysis. Appearance quality, conventional chemical composition, sensory quality, and untargeted metabolome were evaluated. The results revealed significant differences in both the appearance and intrinsic quality of flue-cured tobacco leaves with different sugar ester contents. Increasing the sugar ester contents can effectively enhance the sensory quality of the tobacco leaves, improve the remaining flavor, reduce irritation and offensive taste, but the increase of Ⅲ-Ⅴ sugar ester contents may have a certain negative impact on the appearance quality of tobacco leaves. The untargeted metabolome of tobacco materials with varying sugar ester contents exhibited clear and regular differences. As sugar ester content changed, primary metabolic pathways directly related to sugar ester synthesis, as well as secondary metabolic pathways such as flavonoids and alkaloids, showed significant coordinated changes. Compared with medium and low sugar ester materials, the aroma material basis of high sugar ester materials is richer, which may be an important reason for the best sensory quality performance. Therefore, sugar ester can be used as a key regulatory target for improving the sensory quality of tobacco leaves.
